Heilongjiang Suanzhucai: One Pot of New Year

Pickled cabbage, blood sausage and pork belly simmered together — the New Year of the Northeast begins here.

Suanzhucai is not one dish; it is the busiest day of a northeastern village.

In the villages of Heilongjiang, the most important event after winter sets in is the 'year-pig slaughter'. The host invites relatives and neighbours, slaughters the pig raised over the past year, shares the meat, and that same evening simmers the blood, bones and organs into a great pot of suanzhucai.

The star of the dish is pickled cabbage stewed with pork belly. Home-pickled cabbage is sliced thin and simmered slowly with pork belly and blood sausage for hours. The sourness of the cabbage cuts the richness of the meat, the pork turns soft, the sausage is silky, and the whole kitchen fills with aroma.

The soul of suanzhucai is 'one pot'. Northeasterners like to throw everything in — pork, cabbage, blood sausage, vermicelli and frozen tofu — and let it simmer until the flavours merge. This is not just cooking; it is the honest, generous character of the region.

Suanzhucai is also the social heart of a northeastern village. On slaughter day, everyone comes to help: the men butcher, the women stoke the fire and cook, and the children run wild in the yard. That evening the whole table gathers, drinking and eating, and a year of hard work feels worth it.

Today suanzhucai has entered city restaurants across the Northeast. In Harbin and Changchun, visitors can taste this dish full of New Year feeling. But the real thing is still in a farmhouse courtyard: a roaring fire, a steaming pot, and a host who waves you in.

When you visit Heilongjiang, try suanzhucai in winter. With sticky rice buns and frozen pears, and a story from the host, you will find that even the coldest Northeast keeps a warm heart.
