A mung-bean crepe, a cracked egg and a crispy fritter — Tianjin's morning starts with jianbing.
Jianbing is not a snack; it is the reason Tianjin people get up.
At six in the morning, the street stalls of Tianjin are already steaming. Mung-bean batter spreads across the hot griddle, an egg is cracked on top, scallions are sprinkled over, and the crepe is flipped, brushed with sauce and wrapped around a fried fritter. In less than two minutes, a jianbing is in your hands.
Tianjin people take their jianbing seriously. The batter must be made from mung beans, not wheat flour; the filling must be a freshly fried youtiao, or a crispy baocui; the sauce is sweet bean paste with chilli, and the scallions are raw. Miss any of these and an old Tianjin local will shake his head: this is not authentic.
The history of jianbing goes back more than a hundred years. Tianjin was a river-port city where dockworkers needed a cheap, filling breakfast before dawn. Mung-bean batter was inexpensive and hearty, and wrapped around a hot fritter it became the most practical meal. Over time, jianbing became a symbol of Tianjin's street life.
A good jianbing is all in the details. The batter must be the right thickness, the egg spread evenly, the fritter fried until crisp so it does not go soft inside the crepe. Old vendors say the secret is speed — the crepe cannot wait and the heat cannot drag.
Tianjin's jianbing has its own small rivalries. Some prefer the soft youtiao, others the crisp baocui; some order two eggs, some want double filling. Vendors remember regulars and greet them with 'the usual'. One crepe, and the whole day feels right.
Today jianbing has spread across China and become a national breakfast. But Tianjin people still believe the best jianbing is from the stall downstairs. It is the city's most ordinary and most comforting memory.
When you visit Tianjin, wake up early and find a street-corner stall. Watch the vendor spread the batter with one smooth motion and take a hot bite. With a cup of soy milk or doufunao, a Tianjin morning begins.
